About the Role

Supermoon Bakehouse is looking for a Sous Chef to support the Head Chef and help run daily operations. This role focuses on production, quality, and team leadership, making sure everything runs smoothly across the Bakehouse and Gelateria.

• Support daily operations including production, ordering, and staffing
• Maintain clean, organized workspaces and storage areas
• Check quality at every stage: mixing, lamination, proofing, baking, and finishing
• Work hands-on in daily pastry production, especially laminated doughs
• Help develop and test new menu items each month
• Train and support team members, and help maintain a positive work environment
• Follow food safety standards and maintain DOH logs
• Work early mornings, weekends, and holidays as needed
• Assist across all products: croissants, cruffins, breads, cakes, gelato, and more

• Manage daily production schedules and scale recipes accurately
• Maintain food safety, cleanliness, and equipment care
• Help manage inventory, deliveries, and cost control
• Operate bakery equipment and handle physical tasks (lifting, standing, etc.)
• Support and guide junior team members
• Work with FOH to ensure consistent product quality and presentation

• 1+ years of lamination experience in a high-volume bakery
• Ability to consistently work early shifts (4 am-7am start)
• Strong understanding of lamination, fermentation, and dough handling
• Good leadership and communication skills
• Able to lift at least 50 lbs 
• Strong attention to detail and ability to work efficiently
• Basic math and computer skills for scaling and inventory
• NYCDOH Food Protection Certificate (or willingness to obtain)
